Ingredients:
8 c. of Chex multi grain cereal squares
2 c. flaked coconut
1 c. slivered almonds
1 c. pecan pieces
1 c. sweetened dried cranberries
1/2 c. butter
1 c. (12 oz.) pure honey
Directions:
Line 2 large shallow rimmed baking pans (15x10x1 size or larger) with aluminum foil or parchment paper; spray well with cooking spray. Layer half of the cereal, coconut, cranberries and nuts in each pan. Gently mix with hands or wooden spoon. In a 2 cup glass measuring cup, microwave butter on high 1 minute till melted. Measure honey in the same glass measuring cup; whisk to combined. Drizzle half of the butter mixture over each pan of cereal mixture. Gently stir with spoon to coat cereal. Bake at 325 for 30-35 minutes, until coconut turns light brown, stirring every 10 minutes. Cool pans of snack mix on wire rack. Break apart large pieces. Makes about 12 cups.
