makes 18 muffins
Ingredients:
1/2 c. butter
1 1/4 c. sugar
2 eggs
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 c. milk
2 1/2 c. fresh blueberries
*1/4 c. sugar for topping
*1/2 tsp. vanilla
Directions:
1. Grease and flour muffin pans, or use paper liners. Preheat oven to 375.
2. In a large bowl cream butter and sugar until light and fluffy. Add eggs and mix them in.
3. In another bowl, mix flour, baking powder, and salt. Add flour mixture to butter/sugar mixture alternating with milk. Mash 1/2 c. blueberries, and add to mixture. Fold in remaining blueberries.
4. Pour into muffin pan and sprinkle with remaining 1/4 cup of sugar.
5. Bake for 25-30 min. at 375 degrees. Let them cool completely before removing from pan.
*I did not add the 1/4 cup of sugar on top. They were plenty sweet and I didn't want to add the calories. Also I added 1/2 tsp. of vanilla to give it a little more flavor. I will definitely be making these again.
